Cook Time: 20 minutes
Stuffed chicken is good because of its tasty filling and keeps the meat juicy and tender. Of course, you can keep leftovers in the refrigerator and reheat them later, but remember: the meat will get a little tougher when you reheat it. Therefore, try to serve this mouth-watering dish fresh and warm.
Grilled vegetables such as asparagus and broccoli are a perfect accompaniment.
DIRECTIONS:
1. Carefully cut the chicken breasts horizontally, making a pocket.
2. Combine shredded mozzarella, sun-dried tomatoes, chopped olives, oregano, salt, and pepper.
3. Fill the chicken pockets with mozzarella stuffing. Spray the outside of the chicken breasts with olive oil and season with salt, paprika, and pepper.
4. Place a skillet over medium heat and add olive oil.
5. Fry the stuffed chicken breasts on each side until brown.
